What is an allergen matrix?
An allergen matrix is a grid with your dishes as rows and allergens as columns. A tick shows the dish contains that allergen. Staff use it to answer guest questions and the kitchen uses it to check recipes.
Which allergens should a US restaurant track?
At minimum the nine major US allergens: milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, soy and sesame. Many restaurants also track gluten, mustard, celery, sulfites and others their guests ask about.
How often should I update the matrix?
Every time a recipe, ingredient or supplier changes. A matrix that's one supplier swap out of date gives staff the wrong answer with full confidence.
